| Abstract | Matcha is a powdered tea from Japan that is rich in catechins, dietary fiber, vitamin K, and amino acids such as theanine, not only being part of the beverage consumption culture, but also associated with health benefits that are relevant to the needs of the active and nutrition-conscious young generation. The purpose of this study was to determine the content of functional compounds in Pure Matcha. The method of this study was experimental with random sampling. Sample preparation was carried out by making ethanol extracts, phytochemical screening, fractionation with N-Hexane, Ethyl Acetate and Aquades solvents which would be tested on the Fourier Transform Infrared (FTIR) instrument. The results of the FTIR examination were obtained in the frequency range of 1550.02. The frequency of 1550.02 obtained was explained that it contained the C=C Aromatic group. This absorption is related to the main bioactive compounds such as catechins, especially Epighallocatechin (EGCG), tannins, and phenolic acids which are rich in benzene ring structures. This absorption can also be associated with the presence of flavonoid compounds and other phenolic derivatives which act as natural antioxidants. Therefore, the appearance of absorption at 1550.02 cm⁻¹ indicates that pure matcha powder contains phenolic and flavonoid compounds which have an aromatic structure, which contribute to the antioxidant activity, bioactive properties, and health benefits of matcha. The conclusion of this study is that the functional groups in Pure Matcha are aromatic C=C, C=O, C-O, O-H, C-H, and C-N. In this study, the functional compounds in Pure Matcha are catechins (EGCG, EGC, ECG, and EC), flavonoids, tannins, caffeine, chlorophyll, carotenoids, and L-theanine. The suggestion from this study is that future researchers are expected to use various samples from other brands of pure Matcha. | 1 |
